cucumber summer salad

Cucumbers are my favorite no matter what the season is! May beCucumber salad | Summer Salad because we both originated in India ;). Cucumber is one of the very low-calorie vegetable. It gives just 15 calories per 100 gms. In addition to anti-oxidants and Vitamin K, It is also a great source for potassium. Wondering why do you need potassium? You may find this post interesting – importance of potassium to humans . I for one take a lot of sodium in my diet (even after trying to reduce it). Potassium balances out sodium. Well, enough of science! Let’s have a quick look at this easy and visually appealing cucumber summer salad.

This is a very Light salad for summers, quick and easy to make and fun to serve.

Ingredients

  • 1 Cucumber
  • 1/4 piece Daikon Radish
  • Radish
  • Lemon pepper Seasoning
  • Salt
  • Crushed Black pepper
  • mint leaves

Cucumber salad | Summer Salad Procedure

Peel/Clean the Cucumber,  Daikon Radish and cut in spiral shape using the spiral vegetable slicer. Toss in some chopped mint, lemon pepper seasoning, salt and pepper.

Chill covered in refrigerator for a while before serving.
